While it sounds so exotic, I can assure you that making it is extremely simple. You’ll need an unbaked pie crust for this. The original poster has directions on how to prepare one from scratch, or you can get the pre-made kind. I chose pre-made for this because I honestly didn’t have the time to deal with making it myself. Getting this together is a snap. You’ll mix the sugar, corn meal, flour, eggs and salt together in your mixer. Then you will very gently stir in the pecans, pineapple and coconut by hand. Then, stir in the melted butter.
Once everything is mixed gently but well, pour it into your unbaked pie shell and bake it. You will definitely want to cover the edges of the crust with aluminum foil to prevent them from burning, after it has been baking for nearly an hour. No one likes burnt crust!
Make sure you have whipped topping to serve it with. The original poster mixed hers with almond extract but I didn’t realize I was all out. Instead, I used coconut extract and it was AWESOME. Like the original poster, I added a little sprinkled coconut for garnish. My husband begged me to make this again next week and he’s not that into desserts so there you have it.
