IF PECAN PIE WERE TO TAKE A VACATION…!
Pecan pie is such a staple pie during holiday time. But sometimes, I get the itch for one when it’s far from holiday season. It seems almost wrong to eat one outside of fall or winter, you know? Like I should be eating something more warm-weather-esque. Something tropical. It made me think how desperately in need of a vacation I am. But we can’t go anywhere for a little while so I thought that perhaps I could make something more tropical to trick my taste buds into thinking we were off in some lovely, warm and sunny place. Where my toes are in the sand and I’m dozing off with frozen drinks in my hand. Ahhhh.
As my mind wandered, I began to wonder about mixing the concept of pecan pie with tropical ingredients like coconut or pineapple. And that’s when I found this recipe, which is clearly the holy grail of tropical pecan pies. It is astoundingly delicious and you can (and should!) make it any time of year.
