First, you’ll make your crust from scratch. It really is worth the effort. BUT! If you really just cannot bear to make your own crust or you already have a premade one in your freezer, you can use that. Just know that this recipe gives you a fabulous crust recipe that will totally impress.
Get that filling going in a large saucepan on medium-high heat until you see it get thick and bubbly. Turn down the heat and cook for a couple minutes more, stirring as you do. Then take it away from the heat. Mix a small amount of this hot filling with your egg yolks and then return the whole thing to your pan. Be sure to stir constantly. It’s critical in getting this just right. Boil it once again and add the remaining filling ingredients as the recipe instructs.
Once you deal with the filling, then comes the tricky meringue. Stay on task with the instructions and you’ll be fine. The trick is watching the peaks that form. At the end, the peaks will be stiff and glossy. Bake until the meringue turns golden brown. Cool before refrigerating. It needs at least 3 hours of chill time in the fridge before you can serve it. Lots of work, yes, but SO worth it!
