But since it’s not football season, I just shaped mine like regular peppermint patties. You’ll mix your cream, butter and all the extracts together. Then you’ll add the powdered sugar and turn up that mixer just a little to blend everything really well, which could take several minutes.
Shape this filling into a ball and set it on parchment paper-lined baking sheets. Flatten your balls and freeze them. It’s best if you let these chill overnight. When you’re ready the next day, melt your chocolate and then dip the frozen peppermints in. They’ll set quickly because they’re frozen. Then you can store them at room temperature and most importantly, gobble them up. It’s a wonderful balance of smooth mint and sweet chocolate. My pregnant friend says the baby kicked her several times in approval so there you go.
