GET THE GOOD STUFF!
If you love those store-bought oatmeal cream pies, do yourself and your family a favor and make these real ones right here. You’ll be so glad you did and they’re pretty easy to fix up. The first part is making the oatmeal cookies. It’s a very straight-forward launch into the land of cookie dough. Creaming butter and sugar. Adding eggs and vanilla. Combining dry ingredients. Mixing dry and wet things together. You get the idea. You’ll scoop the cookies out onto your baking sheet. You can make them big or small, depending on your preference. I made them small so I could tuck some in the kids’ school lunches.
You’ll need to let the cookies cool after baking before you begin making the cream filling. Use the paddle attachment on your mixer to make that happen. You may need to adjust the consistency of the cream. For thinner, add more cream. To thicken it up, add more powdered sugar. Then it’s all about assembling the cookies. Spread the frosting on the flat side of one cookie (or pipe it on if you prefer) and then lay the flat side of another cookie onto it. Keep doing this until all of them are assembled. These need to be kept in the refrigerator so make sure you let them sit out at room temperature for an hour before serving. Awesome for school lunches!
