CAKE IN 8 INGREDIENTS!
Eleanor was truly touched that we dropped back by to bring her this cake. I’ll be popping in on her more often now, knowing that she’s alone. I know what it’s like to feel lonely. Good thing cake can fix that! First, you’ll need to put your egg whites in a bowl and let them come to room temperature. Then you’ll need to use your sifter to combine the confectioners’ sugar and flour together. Do it twice to ensure no lumps snag up your cake.
Next you’ll beat the cream of tartar, extracts and salt with the egg whites until you get lovely soft peaks. You’ll slowly add the granulated sugar and beat on high until it becomes stiff and glossy with peaks and the sugar has dissolved. Then, you’ll slowly fold in the flour mixture and spoon it into your tube pan. Use a knife to cut through the batter to get rid of air pockets. Bake until lightly browned on the lowest rack in your oven. Then immediately pop out of pan to cool completely. You can dust it with confectioners’ sugar for an extra pretty appearance.
