A LIGHT AND AIRY BLESSING!
Angel food cake, as well as pound cake, was never really on my must-bake list. My experience with these was primarily disappointing store-bought cakes, many from the freezer section, that just tasted dense in a very dry way and unrewarding. Like a waste of calories. For me, if I’m going to enjoy cake, it needs to be moist and spectacular and loaded up with frosting. It wasn’t until very recently when I started dabbling around with some pound cake recipes that I discovered it wasn’t as bad as I’d previously pegged it. Ditto for the angel food cake. Still, I’m usually busy baking other goodies to really pay much mind, but I was inspired by my elderly neighbor to try out this angel food cake recipe.
Eleanor is one of those really cool old people who has been through hell and back and still gets up every day, puts on perfectly pressed clothes and fixes up her hair and make-up before going about her day. She’s friendly and fun and I had the greatest pleasure of talking to her for over an hour the other day. As we sipped sweet tea, she told us stories about her youth. They were tinged with loneliness and I felt like Eleanor could use something that would brighten her day, so I made her this cake.
