ALRIGHT, TIME TO MAKE THESE BABIES!
As I stated before, you can make these by just adding frosting and chocolate syrup/glaze to your already favorite cupcake recipe. If you want these to really taste homemade good, then you’ll want to make everything yourself, including the frosting and the glaze.
Try the recipe below, make it right and it is absolutely mouth shattering!
I’ve added some very cool videos below the recipe as well, so if you feel stumped by the text, by all means watch the video to get a visual on how to do it all.
The Cupcakes
Tools you’ll need:
- Mixer (Stand or Electric Hand)
- Whisk
- Spatula
- Measuring cups and spoons
- 1 large bowl
- 1 medium bowl
- 1 muffin tin
- Paper cupcake cups
Ingredients for 12 cupcakes:
- ¾ cup of flour
- ¾ tsp of baking powder
- ¾ tsp of baking soda
- ¾ tsp of cornstarch
- ¾ cup of white sugar
- ½ tsp of salt
- ¼ cup of cocoa powder
- ⅓ cup of buttermilk
- ¼ cup of brewed coffee
- 3 ½ tbsp of vegetable oil
- 1 egg lightly beaten at room temperature
- 1 tbsp of pure vanilla extract
Instructions:
- Preheat your oven to 350° F
- Place paper cupcake cups inside a muffin tin
- Measure and place the flour, baking powder, baking soda, cornstarch, cocoa powder, salt and sugar into a large bowl
- Whisk the contents in the large bowl and put it aside
- Measure and place the vegetable oil, lightly beaten egg, vanilla extract, brewed coffee, and buttermilk into a medium bowl
- Pour the medium bowl contents into the large bowl
- If using an electric hand mixer, mix the contents in the large bowl at a medium speed for 2 minutes
- If using a stand mixer, pour the contents of the large bowl into the stand mixer bowl and mix using a paddle attachment at a medium speed for 2 minutes
- (Optional) For easy filling of paper cupcake cups, pour the mixed batter into a large measuring cup then pour into cupcake cups
- Fill the paper cupcake cups approximately 2/3 of the cups
- Bake in the over for approximately 15 min. and use the toothpick test to make sure they’re ready
- Carefully take cupcakes out of the muffin tin and place them on a cooling rack
- Allow cupcakes to cool down all the way before applying the frosting
The Chocolate Glaze
Tools you’ll need:
- 1 medium or large stainless steel bowl
- Pot
- Spatula
- Cutting board
- Cutting knife
Ingredients:
3 tbsp butter
2 ½ oz of your favorite chocolate bars
2 oz whipped cream
Instructions:
- Boil water inside the pot and stop heat after the water starts boiling
- Take the chocolate bars and chop them up and put them in the stainless steel bowl
- Add whipped cream and butter into the bowl
- Put the bowl on top of the pot that you boiled water in
- Once everything inside the bowl has melted, stir them with the spatula
- Set the bowl aside to cool
The Buttercream Frosting
Tools you’ll need:
- Stand mixer with whisk attachment
- 1 small saucepan
- Candy Thermometer
- Spatula
Ingredients for 6 cups of frosting:
- 8 large egg whites
- 1 3/4 cups of white sugar
- 1 pound unsalted butter at room temperature
- 1 tsp of pure vanilla extract
- 1/2 cup of water
Instructions:
- Attach candy thermometer to small saucepan
- Put water and sugar into the small saucepan and boil it over medium heat
- When the temperature reaches 230°F start, in the stand mixer, start mixing the egg whites at medium-high speed until it becomes stiff but don’t over beat it such that it becomes dry
- When the sugar/water mixture reaches 240°F, take it off the heat and pour it into the stand mixer while its still running
- Continue to mix until it’s no longer hot and reaches room temp.
- Keep the mixer running and now add the butter little by little until it spreads
- Add the pure vanilla extract into the mix and continue mixing until its all smooth
- Store in fridge, stays good for about a week
Putting It All Together
Tools you’ll need:
- Piping bag – 14″
- Piping tip – #806
- (Optional) Spoons for each cupcake
Ingredients:
- Buttercream frosting (made above)
- Chocolate glaze (made above)
- (Optional) Sprinkles – rainbow, chocolate, etc.
- (Optional) Cherries or your favorite topper
Instruction:
- Make sure the cupcakes are cool
- Use the piping bag to pipe the frosting onto the cupcakes
- Once the chocolate glaze has cooled, pour it on top of the frosting
- (Optional) Add sprinkles, cherries, etc.
- Enjoy!
