The apple pie filling in these is heavenly, but if you want to speed things up, you can use canned filling. Just know that fresh is infinitely better. And speaking of infinite, there are an infinite number of possibilities for making hand-held pies. You can totally use different fruit fillings and customize it to hold your favorite fruits.
Whatever goes in, make sure to brush it with egg wash so it gets that flakey golden brown crispness to it. Also, cut slits in the pastry to let the steam vent out.
