THE BEST OF BOTH WORLDS!
This recipe was so easy and so delicious. I doubled the recipe because, as I said, I had my cousin, her brother (my other cousin) and my cousin’s husband along with their 8 children. PLUS my family. That’s a lot of people to feed. I had a few other things for them to eat too but I wanted it to be very no-muss, no-fuss in that the kids could grab these doughnut muffins and then run off and play and us grown-ups could catch up.
To make things very easy on yourself, you should grease your muffin liners too so they peel off easy. That makes for easy clean-up and believe me, when you have that many people to clean up after, it makes all the difference. The batter is fairly simple though you’ll need to be cautious when you add the flour and milk. You’ll alternate between the two, carefully pouring and then mixing until well-blended. You should start and end with the flour. Then bake, and while that happens, make your glaze. When the muffins come out, let them cool just a little bit and then dip the tops of them into your glaze. The original poster said she dipped them twice so I did as well and let me tell you that you absolutely must do that. Nothing is better than extra glaze! Wow! These were a big hit. Enjoy!
