A FAST WAY TO UP YOUR BREAKFAST GAME!
As a child, I always loved when Mom or Grandma would make us French toast for breakfast on the weekends. Once when Mom had run out of powdered sugar, she topped ours with granulated sugar. Needless to say that is how I always preferred my French toast since. The more of a gritty layer of sugar on top, the better. I still love it this way. My husband, the killjoy, insists that I mustn’t eat it this way in front of our kids and so in the interest of setting a good example, I take it easy on the sugar. Being an adult isn’t that fun you know. Sigh.
Anyway, French toast is always well-received in our home. And so are muffins. So when I found this recipe for French toast muffins, I knew I had to try it out. I love relieving myself of stove duty. That’s the downside of things like French toast. You have to stand there, flipping the pieces and serving them and you always get that wonky piece no one wants.
