MOIST, CHOCOLATE-FROSTED BLISS!
Off the bat, I’m going to tell you this cake uses a cake mix. But hey, sometimes it’s great to use mixes because it simplifies your life. You can easily doctor them up to be a little more homemade than box and that’s what this recipe does in the most delightful way. As an avid baker, I can tell you that I always have a stash of mixes around. I much prefer from scratch but there are times when my kids have some bake sale at school that they’ve neglected to tell me about until late at night or my husband forgets the company potluck and is sure to tell me as I’m falling asleep writing on the couch even later than that.
And then there are the times friends just drop by with their kids and we’re busy talking, laughing and enjoying each other while the kids play. For all these pop-up situations and more, I always have mixes at the ready so I can pull out a nice treat in a moment’s notice.
