WHAT’S NOT TO LOVE?
You know what’s great about this recipe? There’s the unbaked pastry shell making life easier for you. There’s the no-baked-ness of this recipe (aside from the baking of the pie shell of course), and there’s the strawberries themselves. The original poster put something interesting in her notes. She sometimes leaves the strawberries whole and puts them into the pie with the pointed end up. It saves time and makes for a pretty presentation. Did I do that? No. I stupidly didn’t see the tip until I’d already cut up the strawberries. Such is life.
Make your gelatin mixture while the crust cools. You’ll need to let the gelatin mixture itself cool down in the refrigerator. While this is happening, you can artfully arrange your strawberries in the pie crust. When the gelatin mixture is cooled, pour it over the strawberries and then refrigerate it until it has set. You can garnish it with mint as the recipes suggests or you can be like me and blob a nice scoop of Cool Whip on top. I regret nothing.
