SHAKE THINGS UP!
This is a great cake for a potluck or informal gathering. If you want a pretty cake, this isn’t going to win that showstopper award. But it’s going to win over taste buds in a big way. And it’s so super easy. Mix up sweetened coconut and chocolate chips in a bowl and then pour it into the bottom of your pan. Then in your mixer bowl, make the cake mix according to the directions on the box and pour it on top of the coconut/chocolate chip mixture.
Then you’ll melt the cream cheese and butter over medium-low heat on the stove. Keep stirring constantly until it’s melted and when you take it from the heat, add your powdered sugar. Mix this all up until you’ve got a nice smooth thing happening. Now for the fun! You’ll pour that cream cheesy mixture on top of your cake batter and then smooth it out ever-so-gently to cover the whole top. You may experience some sinkage here and there but that’s ok! No worries! You can serve this warm or cooled, whichever you prefer, but either way, you need to give it at least 30 minutes after baking to cool down before indulging.
