Let’s bake up some magic! You’ll make your batter by creaming the butters (peanut butter and the other butter) and both sugars together. Then you’ll add the vanilla and mix it up. Eggs go one at a time, and you’ll need to take care to mix well after each one is added.
Flour, baking soda and salt get mixed together first in another bowl and then get added to the dough mixture. After it’s completely mixed, the peanut butter chips go in. You’ll roll them into little balls and then roll those little balls into sugar, making sure to cover every little bit of it. Put them on a non-stick surface like a greased baking sheet or parchment paper and then take glass and gently press the bottom of the glass down onto the balls to squish them a little.
Do NOT over-bake these! No more than 9 minutes! They will still be light. They should not be brown at all. Let them sit on the cookie sheet for 5 minutes after baking before putting them on a wire rack for further cooling. These cookies are supposed to be very soft and melt right in your mouth. If you over-bake them, they just won’t have that Disney magic.
