CREAMY CARAMELS WITH JUST 5 INGREDIENTS!
These are easy and impressive, and easily impressive. Ha! But seriously, before you begin, make sure you have 2 things – wax paper, which you will need to wrap these up into individual pieces, and a candy thermometer because you do not want to try to guess with the temperature or you will mess up the whole thing.
You’ll combine the sugar, corn syrup and butter and boil them. Stay right there and stir constantly until the boiling happens, then bring it to a slow boil for 4 whole minutes without stirring. Once the time is up, take it off the heat and add the milk before putting it back on a reduced heat. This is where the candy thermometer comes in. You’ll need to get your reading just right so that the caramel is soft.
One word to the wise: the original post gives some great advice for testing your candy thermometer’s readability first. If you’ve had your thermometer for a while but haven’t used it very often, it’s best to give it a little test with some boiling water to see what temperature registers so you can adjust accordingly. The candy thermometer is your best friend with a recipe like this because the right temperature is critical to your success.
