EASY ELEGANCE!
Now one thing I found comforting to know was that the original poster confirms that these do not need to be refrigerated. I was concerned about that as well because cream cheese is something that you are supposed to keep in the fridge, but there is nothing to be concerned about here with storing them as long as they are in an airtight container kept at room temperature.
To make these, mix the cream cheese until it becomes smooth. Add mint extract next and any food coloring if you want to make these in cool colors. I had green so that’s what I did, but you can do anything you wish. If you’re making these for a party with a theme, coloring them to match is a nice touch.
Then comes the powdered sugar. You’ll likely need to scrape it down off the sides of your mixing bowl to fully incorporate it. Once the dough is ready, roll it into small balls and set them on wax paper. Take a fork and flatten them. Then let them dry for 12 hours. You’ll need to turn them over so the bottoms dry too. Once they’re dry, pack them up into containers. The hardest part is waiting for them to dry, but once they do, they’re worth it.
I found this delightful recipe from the Chocolate, Chocolate and More blog. Click the link below to see the blog and the full recipe for these Cream Cheese Mints.
