ONE OF THE TASTIEST CHALLENGES EVER!
Not only is this bread delicious and even better than the cranberry bread I love at the nearby café, but it’s also beautiful. It’s also a massive test of your skills in the kitchen. If you are looking for a cooking challenge, try this out. It is most definitely a labor of love. First of all, you’re going to make your dough. Not hard, but quite tedious since you’ll need to knead it out after mixing it. Then it needs to sit and rise. While that happens, go ahead and make the cranberry filling. It’s a nice tart and tangy flavor that made it hard for me to stop eating this loaf. It’s really good. This part is super simple. You have the option to add walnuts here. I chose not to because while I love walnuts, I didn’t want them interfering with my cranberry loaf.
When the dough is ready, you’ll spread it out into a big rectangle, spread the cranberry filling and roll that baby up like a jelly roll. That’s how it gets those gorgeous swirls. Crumb mixture gets added on top after you put it in your loaf pan. When it’s done, you can opt to do a confectioners’ sugar icing or a cranberry-caramel icing. Instructions for both follow the recipe. I would have loved the cranberry-caramel one but didn’t have caramels on hand. I did the confectioners’ sugar icing though and it was awesome.
