A DESSERT FIT TO END ANY FABULOUS MEAL!
Now this is not the kind of cake you whip up for dessert on any night. It needs to be special. Maybe special guests or a special occasion. It’s not something you’d serve for dessert after pizza night on Wednesday, that’s for sure! It takes a lot of work, but it’s worth it. And it’s not hard, but it will keep you busy. You’ll first melt butter and add it to your instant coffee, which you’ll then add to boiling water. Whisk until it’s combined and then let it be. This will be added to your batter mixture momentarily. Speaking of that, it calls for buttermilk, so if you don’t have that on hand, you can make it using milk and lemon juice or vinegar if you prefer. No need to run out and get some if you’ve got everything else.
When you bake your cakes, you’ll need to cut them in half horizontally once they’ve cooled. Level them off and take the suggestion of eating the scraps. Yum! The cream cheese filling is easy. Once it’s light and fluffy, it’s ready. Then onto the coffee frosting, which is also cinchy. You’ll begin to layer your cake on a nice cake stand. Cake, spread with cream cheese filling. Repeat until done. Then comes the fun part. You’ll pour the coffee frosting on top and let it run down the sides, and then you will have a glorious cake to gloat about!
