YOU HAD ME AT GANACHE!
I seriously love me some ganache because it sounds so fancy and looks so pretty and it is so insanely easy to make. I remember the first time I made it and I was like, “That’s it?!? WHY didn’t I make this sooner?!?” So the other odd ingredient in here is mayonnaise. Don’t let that turn you off. You will not taste it at all and it will make this cake so unbelievably moist. This is what they did in the olden days to make a good moist cake. You won’t be sorry, trust me. With all the chocolate in here too, you will not taste the mayonnaise or the coffee. Coffee is added to lots of other chocolate cake recipes to bring out the chocolate flavor. You’ve probably tasted a cake with coffee in it and had NO clue.
Once you mix the batter, pour it into your pan and bake. When it’s done, let it cool. And once it’s cooled completely, you can go on to make the ganache. Again, the coffee flavor is very subtle here but whereas you need it in the cake, you don’t need it in the ganache if you don’t want it, I suppose. When making that ganache though, just be sure to keep it from boiling or you’ll ruin the consistency. Once it’s done, pour it onto your cake immediately. Goes great with a cup of coffee, or even more decadently with ice cream.
