CREAMY DREAMY COCONUT!
These bars do take a while to make, but putting them together is easy. It’s a lot of boiling but it’s worth it. You’ll make your own shortbread crust. If you want, you could technically cheat on that one and get a pre-made crust. It will be our little secret. Toast your coconut for the topping. Toasted coconut gives it another dimension of coconut taste and you totally want that. You’ll bake the coconut flakes for no more than 6 minutes, stirring often to keep them from burning. We don’t want burnt. Just toasted.
Incidentally, when it comes to the coconut flakes, make sure you buy the sweetened kind. They’re moister and add much more flavor. With the filling, you’ll need to be on point, watching it boil and thicken, which could take up to 30 minutes. Be patient. It will all come together soon enough, but then you’ll be waiting for it to chill for as long as 4 hours. That’s ok. You can totally take a nap while you wait. I had a rare moment where I had the house to myself while I was working on these so I took advantage of the nap. Score! Enjoy these…they disappear fast!
