IT COMES WITH A SECRET INGREDIENT!
When you first taste these in all their coconut gloriousness, never would you guess the secret ingredient. You want to know, don’t you? Of course you do! It’s sour cream! Yes, really! It gives these cookies the cloud texture you’re going for. Shredded coconut also goes into the cookie batter so that these have the exquisite taste of coconut throughout. You’ll scoop and drop the cookies onto your lined baking sheets so they have that kind of blobby quality to them.
While your cookies cool, you’ll make your frosting. Then, when frosting those cookies, please remember to dip them in the shredded coconut immediately. You’re going to let them dry before moving them, be it to eat one or ten, or to store them to take with you for a potluck or picnic. One word to the wise though – make sure you taste one before you bring them anywhere. Because the likelihood of you having any leftover is nonexistent.
