The batter isn’t very hard either. You’ll mix everything together and let your mixer do the work. That’s easy enough, right? Right! Just remember that the egg yolks get mixed with the batter first and that you will mix the egg whites separately until they’re stiff.
The frosting is where you’ll need to pay some attention. The original poster mentions that some people found the frosting to be runny. If this happens to you, just add more powdered sugar as needed to even out the consistency to your liking. That will solve the problem. A cake like this is as beautiful as Cinderella’s gown. And that’s largely because you cover it with sweetened coconut shreds. So if you do a wonky job frosting the cake, don’t worry. That coconut will cover up any imperfections and it will look something from a fancy cake magazine. Even Mom won’t be able to point out any flaws to me on this. Happy birthday, Mom!
