HEAVEN ISN’T TOO FAR AWAY!
As I said, this is an easy cake for beginners to impress themselves, as well as their guests. Give it a try! You’ll combine the flour and sugar. Then you’ll beat egg whites with warm water in your mixer. You’ll look for them to become foamy. Once they do, it’s time to add cream of tartar, vanilla, salt and coconut extract. Speed things up a bit and keep it up until you see soft peaks form. Not so bad so far, huh?
Next, you’ll work in 3 batches to sift the flour mixture into the egg mixture. Take your rubber spatula and gently fold this in. You need to be very careful so you don’t deflate the fluffiness of the egg whites. That’s it for your batter. Pour it into the cake pan. It’s done baking when it turns golden brown and bounces back when you gently poke it.
The coconut whipped cream is a snap, too. You need that mixer bowl to be chilled first though so follow those instructions to making that happen. Beat the ingredients and then frost the cake. You’ll cover with the coconut shreds for the final touch of elegance. Stand back and admire your work. You’ve done well!
