JUST 8 INGREDIENTS MAKES CHOCOLATY PUDDING!
To make this pudding, you’ll need to whisk together your sugar, salt, cornstarch and cocoa in your saucepan and then put it on your stove over low heat. Whisk away, adding milk in one cup at a time until it’s completely blended in. Then you’ll add your egg yolks. Keep whisking until the whole thing becomes smooth. Up the heat and stir continuously until it begins to boil. Don’t let it get to a full-on boil. Just a few bubbles is good enough. Lower the heat and keep stirring for several minutes. When it’s thicker, you can stop.
Incidentally, you’ll need a strainer for this. Not the kind you use for your spaghetti but a fine mesh one. It will catch the lumps, which you don’t need. Toss those. Next, add the butter and vanilla. Once that butter melts completely, it’s go-time. You can start spooning your pudding into your serving dishes. But don’t skip the next step which is to cover plastic wrap directly onto the surface of the pudding. You want to push that plastic wrap down right on top of it so that no air touches the pudding. This helps keep it from getting that thick skin on top. Chill for several hours and when you serve, garnish with whipped cream. They say it’s optional, but for me it’s a must.
