I love to make things with just a few ingredients. It amazes me that you can make something special with just a little imagination. These are super simple. The linked recipe provides pictures for each step. It also has some other chocolate and peanut butter recipes further down on the page. I have not tried those yet, but feel free to overindulge in the land of chocolate and peanut butter.
As for these, you’ll spread the peanut butter and sugar mixture onto the crackers. Make sure you do this on the unsalted side. It adds a bit of contrast. To keep the peanut butter from getting all slobbery and runny, put the crackers in the fridge or freezer for a short while. Then you’ll melt the chocolate. You can use a double boiler or you can melt it in the crock pot. Or you can be lazy like me and get these out in a jiffy by microwaving the chocolate in 30-second increments to prevent burning. Once it’s melted, dip your cracker sandwiches into the chocolate. You can do this by setting it on a fork and then submerging it into the chocolate. Otherwise you’ll drop your poor cracker sandwich into a sea of chocolate never to be seen again. For a pretty touch, drizzle melted white chocolate onto the tops. Leave them to set on wax paper before indulging.
