MAKE THIS YOUR WAY TO CELEBRATE!
Now this is a nice 3-layer cake that will make any celebration more special. Birthdays, graduations, anniversaries, holidays…this is a great cake for one of those memorable occasions. So just a little advice here…the original poster has given this cake a half-naked look to it. That’s because of how she’s frosted it with a crumb coat on the outside and let the chocolate ganache kind of cover the top and a wee bit of the sides. If you would prefer more frosting than that, you will need to double the amount of peanut butter frosting you make. That’s what I did because go big or go home, you know? If you really want this thing over the top, make double the frosting. It’s like this thick peanut buttery amazingness slamming into the ganache. Oh man. SO good!
This cake calls for shortening but I’m a big believer in not using that unhealthy stuff so I swapped mine out for more butter. I also used milk mixed with lemon juice to create my buttermilk. I completely forgot to buy buttermilk for this recipe and a few others that needed buttermilk too so that worked in a pinch. When the ganache is done, pour it on your cake straight away or it will thicken as it cools before it gets on there. You can then eat the cake immediately or let the ganache set first. Enjoy!
