YOU HAD ME AT OREO CRUST!
I have to be honest here. I really think that cheesecake, and cheesecake bars in this case, with an Oreo crust are even better than original cheesecake. Maybe because I am an active chocoholic. Or maybe because Oreos offer a sublime contrast to the cheesecake filling. Really, it matters not. What is important is getting that crust just right. And that’s really a non-issue because your food processor will get that butter and the Oreos mixed together in just the right texture. Before you press them down into your pan though, make sure to line it either with foil or parchment paper and DO NOT forget to spray it with cooking spray or these things will be stuck and you will be sad. No one wants to be sad around dessert!
Ever notice how when you bake cakes or brownies with chocolate chips or cookie pieces, they all sink to the bottom? That darned gravity is always making life such a challenge! The original recipe site suggests to toss the mini chocolate chips in some flour before adding to the cheesecake mixture as well as before adding them as a decoration to the top. Such great advice! I can’t tell you how many times that has happened to me while baking and now I feel like I have truly discovered the Holy Grail.
