MAGICALLY DELICIOUS!
This recipe reminds me of these bars my friend’s mom made. She called them magic bars, and while similar to these Carmelitas, the one difference was that she added shredded coconut. As good as those were, I was much happier with the results of these. Sublime! Make your life easier by lining your pan with parchment paper. These babies are sticky and it makes removing them from the pan so much easier.
Another easy tip for you: if you don’t have quick oats, you can use rolled oats, but you’ll need to pulse them in the food processor first. The recipe also gives you the option for drizzling chocolate and caramel on top. To me, optional means unnecessary. How could drizzles of chocolate and caramel be unnecessary?!? No way. Go big or go home. Drizzle away, loves. Because life is for living and if you’re not drizzling extra onto your desserts, you are missing out in a big way!
