THE APPLE PIE OF MY EYE!
I’m not sure if I ever told you this but when I lived abroad, I was really homesick. It’s fun and interesting to live among a different culture, but in Asia, apple pie is not something you find on the menu. Unless you go to McDonald’s. And that’s not REAL apple pie. So one day, I’d had enough. I took the apples we bought from the market, peeled and diced them and then cooked them up to make a nice chunky applesauce-like filling. And then I made a simple dough, rolled it out, folded it into a pan, added my apple concoction and then dressed the top with strips of dough. I brushed it with egg and sprinkled with a cinnamon and sugar mixture. And then I baked it and hoped for the best.
My husband instantly fell in love with it and often still asks me to make him an apple pie because he loves it so much. It’s probably his favorite dessert ever. I love my apple pie but I do love trying out other recipes to see what can make it even better. And while mine rocks, I have to say adding caramel to just about anything wins. I love the combination of the caramel and the apples. It’s like a caramel apple in pie form which just plain rules!
