LIGHT AND LUSCIOUSLY LEMON!
When it comes to cakes, I have a super-soft spot for citrusy flavored cakes. While chocolate cakes are rich and heavenly in a different way, cakes that have a citrus burst, particularly of lemon, are so near and dear to my heart. They remind me of afternoon gatherings in the summer, when my mom would invite our relatives over for swimming and fun. The adults would enjoy beverages that made them happy while we kids got to splash in the pool and drink lemonade. But everyone young and old was always happy to have a slice of lemon cake. It just tasted refreshing and moist. It really hit the spot.
