FROM-SCRATCH FABULOUSNESS!
Seriously, it only looks and tastes fabulous. Making this is as easy as pulling out a box mix. Your mixer does all the work for you anyway, so it’s no sweat. The butter and sugar get creamed together. Then you add your eggs. You’ll slowly add the dry ingredients to your wet ingredients, all the while alternating with some buttermilk. By the way, you can MAKE your own buttermilk. Did you know that? Easy-peasy! For every cup of buttermilk you need, use a cup of regular milk mixed with 2 tablespoons of either lemon juice OR vinegar. Ta da! Buttermilk!
After everything is mixed, you’ll add the vanilla. The original poster talks about some fancy exclusive brand of vanilla. I just used what I had in my cabinets and the world will not end if you do as I do. You will still get a great cake no matter what brand of vanilla you use. The recipe also includes a recipe for the frosting. It’s made with buttermilk too, and more vanilla. You could experiment with other flavors, like chocolate for example. I’ll try that another time. I stuck with vanilla on this cake and it was all kinds of amazing. Whatever you do, just allow that frosting to chill for 30 minutes before you go to frost your cake and whip it up again in your mixer before frosting away.
I found this fluffy recipe on the Wonky Wonderful blog. Click the link below to see the blog and full recipe for this Buttermilk Vanilla Cake.
