This is a really great pound cake recipe that provides a lot of servings. If you have a PTA meeting or something like that to go to, I think you’ll be the hero of the day with this. It’s really easy to make but it takes a long time to bake. But your time putting it together only takes about 10 minutes. That’s easy! What’s that? You don’t have buttermilk. Hey, I understand. Buttermilk is not something I keep around my house. I have to make sure I put it on my shopping list if I’m going to bake with it, otherwise I’ll never remember. And even then, there’s no guarantee. So if you don’t have buttermilk, you can make your own with milk and lemon or vinegar. Simply combine 1 cup of milk with 1 tablespoon of lemon juice. Let that stand for 5 to 10 minutes at room temperature. It will be a little thicker and there will be some small curdled bits. Don’t worry about those bits – you will not see them in your finished cake.
Once this is done, let it cool and then you can top it with confectioner’s sugar, which I advise because it gives it a little extra something in presentation, and who doesn’t love more sugar, right? Right!
