READY, SET, BAKE!
On busy days when you need a cake, take the easy way out and use box mix. I used Duncan Hines Moist Deluxe Chocolate Fudge Cake. As I’ve only made this once at this point, I can’t really argue with any room for improvement here. It worked beautifully. I had 2 very lovely round cakes cooling away. And while they did their thing, I did mine by making the peanut butter filling, a very easy task of combining the first 3 ingredients. Done!
As for the chocolate ganache, get that ready when you’re about ready to stack the cake up. You can also opt to slice your 2 cakes in half so you have 4 layers instead of 2. I was lazy. Hey, it was a long day. The ganache should be warm when you pour it on top. Let it run over the sides too because that just means more ganache per bite and there is nothing wrong with more ganache. If loving ganache is wrong, I do not ever want to be right.
