1 HOUR ‘TIL BREAKFAST!
Make the family something they want to wake up to. This cake is just wonderful. If you love blueberries, you’ll love this. Speaking of blueberries, you can get on the end of summer berry sales and make this with fresh berries but if not, you can use the frozen ones. Just don’t thaw them out or they will discolor the batter. This requires 2 bowls. Dry ingredients go in one and butter and sugar go in the other. Once the butter and sugar get all light and fluffy, you’re going to add your egg and milk. Once that bowl is all well blended, add the dry ingredients.
And after that batter is made, in go your blueberries and your pecans. If you wish, you can leave the pecans out. I included them because I think they go great in coffee cake. Make the topping and then sprinkle it over the top of the batter. Then bake! Allow it to cool when it’s done though serving it while it’s still a bit warm is such a treat. Don’t forget to serve it with good coffee!
