Making breakfast treats can sometimes be harder. At least it is for me, because I don’t function very well without coffee. So if you’re like me, coffee yourself up first. Then make life easier on yourself by lining your loaf pan with parchment paper, taking care to grease that paper with butter. Mmmm…butter! Use fresh blueberries if possible for the very best taste. A great trick to keep them from sinking down to the bottom (don’t you hate that?) is to dust them with flour first. Incidentally, this was a trick I was unaware of for years. It really works!
For the yogurt, you can use Greek yogurt as the original poster did. I did as well because in my house, that is what I buy every time at the supermarket. It tastes great, can be used in a zillion different ways and is very healthy. Once the cake cools, make your glaze. Don’t miss that part. It just pulls the whole thing together. It takes about an hour for this thing to be done so either get up early or stay up later and surprise your family or even houseguests with this perfect breakfast loaf that will disappear fast!
