Now don’t be intimidated by the ingredient list. I’ll admit it’s massive, but these are not at all hard to make. Don’t believe me? Challenge yourself. You can totally do this. And you should. The original poster won a contest with these and anything that wins something needs to be made and eaten immediately for the greater good of society. Make them for your next gathering. Get the cookie dough going by combining the butter and both sugars until it becomes light and fluffy.
Then, like all other cookie doughs, eggs and extracts get beaten in next. And finally, the dry ingredients get added, but do so gradually so that it blends well. Once everything is mixed, the walnuts, carrots and raisins join the party. Then you drop them onto a baking sheet lined with parchment paper. Dip the bottom of a glass into sugar and then use it to flatten the balls of dough. While those bake, make your filling. This one is interesting because of the pineapple. I’m not used to that in my carrot cake frosting but let me tell you something….wow. It works, it really does. One bite and you’ll know exactly why this lady won. Good job!
