TAKE THEIR BREATH AWAY!
Yes, it’s all from scratch, but I promise it’s not hard. It turns out so beautifully too. When you put this on the table for dessert, everyone gasps in delight. It’s a real head-turner. This recipe calls for lemon juice and milk, which you’ll mix together to make a bit of a buttermilk. Should you use buttermilk instead? Well, you COULD since that’s technically what you’re making with your lemon juice and milk, but most people don’t keep buttermilk around or use it very often. Even someone that bakes as much as I do doesn’t tend to keep buttermilk around the house. It’s more feasible for me to make it myself.
Now to really make this spectacularly beautiful, you should add the optional toasted coconut on top of the frosting. It adds such a lovely touch plus it gives another texture to the cake and complements the banana taste so well. You’ll toast it in your oven and then add it on. But if you will be serving this to notorious coconut-haters, you can leave it off and it will still be amazing.
