OH WHAT A FILLING!
The original poster came up with this because she didn’t like traditional pie crusts and would only eat the filling. Now we’re left with a light, fluffy phyllo dough crust surrounding a sweet berry cheesecake that’s out of this world. You’ll want to brush your phyllo dough with butter as you layer it into your pan, trimming the edges as you go. You’ll bake it for no more than 8 minutes. That center will be puffy, but that’s ok.
Next, you’ll make the filling. Your mixer will help you with this. You can use frozen blueberries if you wish but if you do, don’t thaw them or they will discolor the batter. Then, bake this glorious thing up. Cover the edges of the crust with foil after 10 minutes in so they don’t turn too brown. Once done, you’ll cool for an hour and then refrigerate to set. Then you can stir up the jelly until it’s smooth and spread that on the pie, followed by whipped topping. Top it off with fresh strawberries and blueberries!
