A HEALTHY AND SWEET EAT!
With ground flaxseed and yogurt in it, this bread is a tasty and healthy option. However, it does also contain dark rum in the batter as well as the glaze. If alcohol is something you don’t want to consume or you’ll be serving children or someone who doesn’t drink, you’ll want to swap that out. But with what? Well, you can use a rum extract which is alcohol-free. For every tablespoon of dark rum, you’ll use 2 tablespoons of rum extract. If rum flavor still bothers you though, try banana extract to kick up the banana taste even more.
Speaking of bananas, make sure you mash them good. Then you’ll cook them up with the butter and brown sugar to get that extra sweet banana taste before they get added to the batter. It takes a while to bake, but it’s worth the wait. When it’s done, you can make your glaze (with or without the rum) and pour it on the bread. Enjoy it warm or cooled for breakfast or dessert, or any time in between.
