Funny and true story for you: I once had no idea how to make those crumbs on the tops of crumb cakes and muffins. Seriously. I thought you had to go buy them that way. I didn’t know! Don’t laugh at me! Well, ok, go ahead and laugh. Because I know at least one of you reading this was like me and thought these things likely fell out of a unicorn’s rainbow. Really though, it’s just butter, brown sugar and flour, and when you keep mixing it together, it makes those glorious crumbs! Mystery solved!
This cake is great as-is, served warm or even at room temperature. However, if you really want to take it up even more of a notch, you’ll make the glaze out of powdered sugar and milk. The original recipe lists it as an option, but I’ve made clear my feelings on optional toppings before…DO IT!
