You know that crumb topping you get on coffeecakes or muffins? I just love that stuff. It’s basically taking something good and making it great. On to the next level. That’s how I feel about this banana bread crumb cake. It just spoke to me. I’ve made my share of coffee cakes and crumb-topped muffins, but I’ve never once thought about a banana crumb cake. Oh yes!
Bananas are one of the best fruits for desserts too. When they start to look brown and ugly and you have to beg your children to eat them when just days before they were begging YOU to buy them at the store, those bananas are prime for baking. If you’re like me, your typical MO is to make a banana bread or banana milkshakes, amiright? But once you read this recipe, you’ll be out with the old and in with the new. Trust me. It’s banana bread bred with crumb cake. Dessert fusion. It’s a thing. But technically, it could pass for breakfast too. I wouldn’t say no to it at 8am. Would you?
