Getting the cinnamon sugar mix together is probably the easiest of the easy for this. Then you’ll want to get the beignets going. Mix flour, sugar, baking powder, cinnamon and salt together first. In another bowl, the egg, bananas, milk and oil get whisked together. Then, mix the wet with the dry until it is just combined.
Now comes the fun part! In your deep fryer or electric skillet, heat your oil until it reaches 375°. Be patient because if you try to drop the batter in too early, you’ll have a mushy blobby mess. When it’s hot enough, drop the batter by the tablespoonful. Only do a few at a time. Too many at once will stick together and form mutant beignets. It only takes about a minute per side until these turn golden brown. Drain on paper towels before rolling them in the cinnamon sugar mixture. Serve warm to your adoring fans.
