UN MOMENTO, POR FAVOR!
Give me a minute and you’ll get the most spectacular arroz con leche recipe on the planet. Or call it rice pudding if you don’t habla. I feel you. But for your free Spanish less, arroz means rice, con means with and leche means milk. So, rice with milk. See? Spanish is so not hard. And you know what else isn’t hard? This recipe. It only takes 5 ingredients! You’ll mix the water, rice and cinnamon on the stove top and get it boiling. Then drop that heat down and let it simmer for a good 15 minutes but no more than 20. The water should be absorbed at this point. Oh, and don’t cover it!
Then you’ll stir in the milk and raisins. Honestly, if raisins bother you (I have to admit I mostly dislike them) you can leave them out though as a non-raisin fan, I must say these do not bother me in rice pudding, strangely enough. You’ll let this boil again, and then you’ll reduce the heat, simmer and leave uncovered for another 10 or so minutes. When it’s done, it’s thick and creamy. Make sure you stir often so as not to let it stick to the bottom. Burnt leche and arroz is never tasted, mis amigos. You’ll also want to toss the cinnamon sticks out after but if you don’t have cinnamon in stick form, you can add ground cinnamon to your taste.
