If apple pie is easy, then these are easier than apple pie. And so yummy!
You’ll blend your apples, sugar, cinnamon, nutmeg, and water in a sauce pan. Cover them up and remember to stir often. If you’ve ever prepared apples for apple pie filling, this is exactly the same concept. You’ll want to cook this until the apples are fairly soft. If you find you have a bit of runny liquid leftover, thicken it with some cornstarch and water. It will look slightly syrupy.
Next, you’ll get the oil hot in a skillet. You’ll gently fry your tortillas until they’re brown. When done, you’ll sprinkle your cinnamon-sugar mixture on them, then fill the taco shells with your apple mixture. If you don’t have a taco holder, you can use your upside-down muffin tin to create a makeshift one in a pinch. From there, top with whipped cream and a light dusting of more cinnamon-sugar mixture. Take that, churros! Apple pie tacos for the win!
