ANOTHER ONE TO FALL FOR!
I love a good easy cookie recipe. These are wonderful and you’ll be eating them before you know it so let’s get started! In the ingredients, the original poster lists lemon juice. I used fresh because I always have lemons on-hand but if you only have the bottled stuff, that’s ok too. Like all things you make, your mixer is your main man. You’ll cream the sugar and butter together while your apples sit, cubed, in the lemon juice. Then you’ll add the egg and vanilla until well combined. In another bowl, the dry stuff gets whisked together and then you’ll incorporate it into your mixing bowl.
Don’t forget that butter either. It should be room temperature before you begin so set it out on your counter for about 30 minutes before you begin making these. Apple goes in last, and then it’s baking time! Incidentally, these would be even more fantastic if served with a scoop of vanilla ice cream! OR! To sandwich around a scoop of vanilla. Yes! Do it!
