I tell you that you cannot go wrong with these. In fact, do yourself a favor and keep the recipe handy because if you make these for a potluck or bring them anywhere else, people will be crowding around you to ask for this recipe. These disappear fast. You blink and they are GONE.
First, you’ll mix the flour and sugar with the cold butter. It should look like coarse crumbs. You’ll push those down into your greased pan and bake to form your crust. The filling comes next, while that’s busy baking. Again, it all starts with flour and sugar. Then you’ll whisk in cream and eggs. At the end, you’ll gently stir in the rhubarb. Pour it onto the crust and bake.
Oh, and about that rhubarb…you can use fresh or frozen for this recipe. Frozen is generally easier simply because you do not have to wait until it’s in season or visit 10 different stores to find it. When it has cooled you’ll make the topping. Which is a cream cheesy delight. Make sure to store it in the refrigerator because of the cream cheese or it will go bad!
