A WINNING TREAT!
When I was a kid, Mom would often take us to the neighborhood diner for a quick lunch or dinner, especially when Dad was out of town. Maybe we made her so crazy that cooking wasn’t an option, like my children do to me now, or perhaps she wanted to do something special with us since we missed Dad. Whatever the reason, we were always overjoyed to go to the diner. We behaved extra well because Mom promised us dessert for good behavior. My brother and I had the most impeccable table manners because we didn’t want to miss out on getting a slice of homemade pie from the diner. It was always so hard to decide. They had such incredible pies.
We would all conspire a bit too, because we didn’t all want to order the same kind of pie. That way, we could all try something new. The brother and I were a little put off the first time Mom announced she’d order the rhubarb pie. This didn’t sound very good to us. But she urged us to just give it a shot. Turns out, Mom really does know best. That did it for us. We loved rhubarb ever since. When I found this recipe for rhubarb custard bars, it made me think of the pie I almost didn’t try and I knew I wasn’t going to miss trying these.
